Sweet & Sour Pineapple Chicken

Ingredients

- Pineapple chunks (canned, 430g) 200g
- Green bell pepper (diced) 80g
- Red onion (diced) 70g
- Garlic (minced) 15g (3 cloves)
- Ginger (minced) 10g
- Reserved pineapple juice 180g (¾ cup)
- Honey 60g (3 tbsp)
- Rice wine vinegar or cane vinegar 60g (¼ cup)
- Cornstarch 1.5g (2 tsp)
- Water (for cornstarch slurry) 60g (¼ cup)
- Cooking oil 15g (1 tbsp)
Procedure

- Combine the pineapple juice, honey, vinegar, and cornstarch slurry in a bowl. Mix well and set aside.
- Heat oil in a skillet over medium-high heat. Cook the MET Food Chicken Breast Chunks for 3–4 minutes until lightly browned, then remove from the pan.
- In the same pan, sauté the garlic and ginger for about 30 seconds. Add the bell pepper, onions, and pineapple chunks, then cook for 2 minutes.
- Pour in the prepared sauce and stir until it gently simmers and thickens.
- Return the chicken to the pan and toss everything together until evenly coated. Serve immediately while hot.
